Quick And Easy Homemade Granola With Honey Vanilla Greek Yogurt And Fresh Berries

I go through stages of love and indifference with yogurt.  Lately, it’s all hearts and flowers.  I can’t get enough Greek yogurt.  Not only do I really love it straight from the carton, but I love trying different ways to use yogurt in place of full flat cream ingredients like sour cream, cream and mayo.   In this dish and a few more that I have upcoming, I’ve flavored the yogurt with vanilla and honey.  It’s can’t-stop-eating-dis-stuff good!  What could possibly go better with Easy Homemade Granola?

I also like a little crunch with my yogurt, so I made some homemade but very simple granola.  You can add anything you like to this granola.  Just follow the basic recipe and doctor yours up to suit your taste.  It’s kind of a great snack all by itself.  Here’s how I did it!

Granola

Preheat your oven to 375°  Into a bowl, mix the oats, chopped nuts of your choice, brown sugar, salt and cinnamon.  I used almonds and pine nuts, just because that’s what I had.  In a separate bowl,  mix the honey, coconut oil (you can use vegetable oil) and vanilla.  Pour the liquid over the oats and mix well, until everything is coated in the love.   Line baking tray with foil and sprayed it with non-stick spray.  Pour the oats out onto the baking sheet and spread out evenly.  Bake for 10-15 minutes.  Keep a watch after 10 minutes to make sure it doesn’t get too dark.  You want the granola to be nicely browned.  Remove from the oven and let it cool.  Break into pieces.  Keep in a airtight container up to 2 weeks.

Yogurt

You can use any flavor yogurt you like.  I made this one with non-fat Greek yogurt.  Just add brown sugar and vanilla.  This is a mixture I’ve always loved made with sour cream.  It’s delicious, but using the yogurt really lightens this up.

Put it together!  In a pretty glass or even a canning jar, like I used, add the granola to the glass, then yogurt, then berries.  Then yogurt and a bit more granola for the top!  Wha-La!  If you use the canning jar, you can make this ahead and take it to work or school and you’ve got an instant breakfast, lunch or snack.
