Sometimes, Chocolate Is The ONLY Answer

Every now and again, a girl just needs some chocolate, am I right?  Well, that was a bit sexist.  We all need a little chocolate sometimes.  This fudge is oooey, gooey, nutty and chewy.  Made with avocado, you hardly even have to feel guilty.  Just a little.  It’s a little naughty.  One thing is definite, you would never guess in a million years that this fudge has avocado in it.

It’s Almost Too Easy To Whip This Up

As I’ve said so many times, nothing makes me happier than when I can easily throw something delicious together and use almost no dishes.  This is another one of those recipes where I can just dump most everything into my food processor and (almost) be done with it.  Here’s how I made it.

Into your food processor, add one whole, ripe avocado. 

Give it a whirl for a minute to puree the avocado.  No lumps should be left at all.  Then, add 6 tablespoons melted butter or vegan margarine.  Pulse again until completely combined.  Add the mixture to a medium size pot and heat on low.  Carefully, add the cocoa powder then the vanilla and a pinch of salt.  Add 1 cup confectioners sugar until completely absorbed.  Once absorbed, add another cup of sugar and continue to stir until combined, then add one more cup of sugar.  

In the food processor, add a handful of almonds and pulse until well chopped.  Add to the pot and give it a good mix.  Prepare a 8 or 9 inch loaf pan by spraying well with non stick spray.  Pour the chocolate and nut mixture into the pan.  Top with miniature marshmallows.  “Toast” the marshmallows by putting the pan under a broiler for just a few minutes, until the marshmallows start to brown nicely.

Remove and let cool.  Cover with plastic and refrigerate for about 4 hours or overnight.  Once fully set, cut into pieces and enjoy!
