Surprise, They’re Delicious and Healthy!

Shut-The-Front-Door!  Listen, I love that you visit my blog and I really want us to be friends forever!  That’s why, I would never lie to you!  These darn brownies are so good and you don’t even have to feel guilty about enjoying them.  Forget flour of any kind, you can make them even better using black beans instead.  Toss the sugar, we’re using the perfect food, honey.   Then, just for good measure, we’re throwing out most of the oil and all of the eggs and substituting another super food in their place……avocado.  By the way, chocolate is another food-with-benefits, and there’s no shortage here.  Another plus, chocolate makes you happy.  Go ahead, give these Fudge Brownies with Black Beans a try, I think you’re going to be over the moon!  The fudgiest brownies in all the land!

What would life be like without chocolate, well, I shudder to think. If you’re a dessert-a-holic like me, this is a great way to bake your cake brownies and eat them too.  A healthy twist on the most favorite dessert on the planet.  Run, don’t walk and join me in the kitchen to bake these Fudge Brownies with Black Beans.  You know, you don’t have to tell anyone what’s in them either.  By the way, I’ve never seen someone hesitate in front of a brownie to ask me “Gee, before I take a bite, what’s in these brownies?”  Have you?

The Recipe!  Fudge Brownies with Black Beans and Avocado

Preheat oven to 350 degrees.  Spray a 9 X 9inch baking pan with non stick spray or use butter and set aside.

Here’s another great thing about these delicious desserts, they’re made right into the bowl of your food processor! 

Rinse and drain a 15 ounce can of black beans, then pour them right into the bowl of your food processor.   Puree until they become a thick paste, about 1 minute.   Use a spatula to redistribute if the beans don’t completely puree.

Next, add 1 large, whole, ripe  avocado, at least 3/4 cup of avocado.   Add  1 teaspoon of pure vanilla extract  and  1tablespoon of vegetable oil.  Next, 1/2 cup of honey and pulse until completely combined and smooth.  Add the dry ingredients, 1 teaspoon of baking powder,  1/4 teaspoon of salt and 1 teaspoon of very finely ground coffee or instant coffee and 1/2 cup of unsweetened cocoa powder.   Pulse until the batter is combined, but don’t over mix.   It should be just mixed in.

Everything is made right in one bowl, in your food processor

Add 1/2 cup (or so) of semi sweet or dark chocolate chips and pulse 2-3 times until completely combined.  Pour the batter into the prepared pan.

Bake for about 35-40 minutes until the center is just set. If you insert a toothpick, it should not come out completely clean. Brownies will firm as they cool.

Once they are cool, cut and serve.
