🌞Your Slaw to Slay!

When you order your sandwich at the deli, are you a potato salad or a coleslaw?  I’m surprised at the strong reactions I hear about coleslaw.  Seems to me, you love it or you hate it.   Try this Creamy Southern Style Coleslaw and it will change you!  This is seriously the best coleslaw I’ve ever made and I’ve been working on it for years.

When I was a kid, we celebrated 🎉 the night before any big event, like the night before a party, company coming to visit,  going on a day trip or (always) the night before vacation with a bucket of chicken from “Colonial Sanders Kentucky Fried Chicken 🐓”.   I always thought that would be first choice for my death-row dinner.  (Fortunately I’ve escaped having to make that choice.)  But, I also loved that Creamy Southern Style Coleslaw.  This reminds me of that KFC coleslaw.  It’s slightly sweet, very tangy and super creamy.  I could eat a mountain of this stuff!

Clearly, I am a coleslaw lover.  I team this with so many dishes, from “everything” summer barbecue to crab cakes.   When we barbecue ribs, this Creamy Southern Coleslaw gets equal real estate on the plate.

My Mandolin is my Frenemy

I’ve written of my love for my mandolin before.  I really don’t know what I’d do without it.  Oh, yes I do.  I’d chop..chop…chop..chop.  Truth is, when it’s really important to make thin and consistent chops, I get bored, and all hell breaks loose on the chopping board.  My mandolin keeps me in check.  I can chop and entire head of cabbage in like 3 seconds.  

But, take my advice!  Never take your mandolin for granted and never get too good to use the hand guard.  I inherited this mandolin from my friend after he nearly lost a finger.   Off he went to the emergency room and received many stitches.  Upon his return, he promptly surrendered his mandolin to me.  Recently he popped by and saw that I was using it.  He turned three sheets of white and nearly fell on the floor just seeing it.  So, take it from me, use the hand guard!  I’m actually afraid of it when I don’t have the guard in use.

You can also make this using the shredding attachment to your food processor.


 

Creamy Southern Style Coleslaw

Clean and core 1/2 large green cabbage and 1/4 purple cabbage.  Using a mandolin or a very sharp knife, shred the cabbage as thinly as possible.  Put the cabbage into a large mixing bowl.  Trim and chop 2 bunches of spring onions, add to the bowl.  Using a peeler, trim 2 carrots and add to the bowl.  Cover and refrigerate while you make the dressing.

Into a medium sized bowl, mix together 1/2 cup mayonnaise, 1/2 cup buttermilk with 2 tablespoons of granulated sugar, 3 tablespoons each of freshly squeezed lemon juice and white vinegar, 1 tablespoon Dijon mustard, 1/2 teaspoon salt and 1 teaspoon each of celery seed and onion powder.  Whisk to combine.

You can toss the dressing with the coleslaw about 30 minutes before serving.
