KISS When You’re Grillin’ and Chillin

I get it, not everyone likes to spend a ton of time cooking.  Here’s a recipe for an easy way to boost your cooking repertroire while keeping it super simple (KISS!)   Even the most basic of recipes will get a major flavor boost by adding a bit of this delicious and oh so easy to make, Herb and Citrus Compound Butter.   Add it to steak 🥩 , fish 🐟 or chicken 🐓  or, put it on vegetables 🌽 🥦.  I promise, when you serve this, you will be amazed at the ooohs and aaaahs that will come your way!

I have to confess, I didn’t go anywhere this summer.  No vacation for us this year.  However, I did a lot of Insta-traveling!  That’s when you enjoy the adventures of your insta-friends, while spending no money, in the comfort of your own home, while wearing very comfortable stretchy pants 😀.    If that counts, I vicariously traveled around the world 🌎 .  But really, I actually do enjoy seeing where everyone has been.  It’s a great way to fill out your travel wish list too.  

One thing we do plenty of every summer is grilling.  It’s fun to barbecue for friends and family, but it’s hard finding something everyone agrees on eating!  I don’t know about you, but at least a few in every group have special requirements.  This butter will work on anything and lifts any ordinary recipe to special.

 

Herb and Citrus Compound Butter 

You can add an awful lot of flavor to a little cube of butter.  You can jam pack it with more herbs, garlic, citrus, etc. than you can imagine.  There are a million different varieties of butters too, but I find that this is a perfect compliment to almost any dish.

Add 1/2 cup softened butter to a bowl.   Chop 3 cloves of garlic, then top with a pinch of salt.  Using the flat side of your chopping knife, push on the garlic and salt until it becomes a paste.  Add the garlic to the butter.

Next, add 3 tablespoons of freshly chopped chives.  Add 2 teaspoons each of fresh chopped oregano and thyme.  Mince about 1 tablespoon of fresh shallot and mix into the butter.  Next, add the zest of 1 lemon.  Add about 1/4 teaspoon salt and 1/8 teaspoon black pepper.  Mix well.

Lay out a piece of plastic wrap or parchment paper and spoon the butter into the center.  Roll the wrap around the butter, creating a log shape.  Twist the ends and refrigerate until firm.
