🎄Blender Bliss🎄

It’s the season for giving, and this is the recipe that you’ll want to share with the cocktail lovers in your life.  What I like about this White Christmas Margarita?… (except for everything!) is it’s special, for sure, but not too over the top or too sweet.  I love anything EVERYTHING made with coconut.  But, would you have thought of coconut in your margarita?  It adds just a tiny touch  of creamy delish-ish-ness, but no real taste of coconut.  It takes a favorite summer tipple and makes it a winter worthy margarita.  Plus, if you’re having a little get together, what’s better than  cocktails best made by the pitcher?  Just call it blender bliss!

I’m Dreaming of a White Christmas Margarita

This is a completely different kind of White Christmas!

Here’s the easy how-to!  

Just dust off your blender, plug it in and add a few cups of ice.  Add a whole can of coconut milk.  I think lite coconut milk is just fine, and it’s still very creamy.  If you like to hit the hard stuff, by all means, use a can of regular coconut milk.  What you can’t use, is the already sweetened stuff like Coco Lopez.  That’s not for this cocktail!

Prepare 6 rocks or margarita glasses.  Rim with lime,  then dip rims onto a shallow plate filled with coarse sanding sugar.  Let the sugar set while you prepare the cocktails.

Combine coconut milk, tequila, triple sec, lime juice and ice in a blender.   Blend until smooth.  Pour into prepared glasses , then garnish with lime wheels and fresh cranberries.
